Ultra Refreshing Iced Ginger Tea

by Natalie on June 9, 2012

Sometimes I get sick of plain ole water so I make something ‘shnazzy’ like this.

Health Benefits of Ginger

  • Rich in powerful antioxidants
  • Anti-inflammatory
  • Anti-nausea

To Make Iced Ginger Tea

you will need…

  • 8 cups filter water
  • 8 – 1/2 inch pieces of peeled fresh ginger root
  • 1/2 cucumber sliced thin
  • 1 lemon sliced into thin rings
  • handful of fresh mint leaves roughly torn

Place ginger pieces and water in a medium-large saucepan and bring to a boil over high heat. Once boiling, lower heat, cover and simmer for 10 to 20 minutes. The longer you simmer, the greater intensity of ginger flavor. Sometimes I just take it off the heat after 10 minutes and let it sit until it is cooled. Strain ginger pieces from water and discard. Let ginger tea cool to room temp before adding cucumber, lemon, and mint. Place into the refrigerator. Serve over ice!

The cucumber, lemon, and mint is just a suggested add-in. The ginger tea is great plain or with many other add-ins. Orange slices would be fabulous!
