Spicy Stewed Fish Recipe

This tasty little number is based on an original recipe from Jamie Oliver’s Food Revolution cookbook. Although Food Revolution is not one of my favorite cookbooks, I really enjoyed this recipe! On a side note- I don’t want to nix Jaime Oliver at all from my previous comment. I absolutely love Jamie and his mission but this particular cookbook (as a whole) is a bit too heavy on the meat for my liking.

I have made this recipe several times. This one-pot meal won’t let you down. It is very easy to prepare, quick to cook, and most importantly, tastes great!

Spicy Stewed Fish Recipe,

adapted from Jamie Oliver’s original Spicy Moroccan Stewed Fish Recipe as seen in his Food Revolution Cookbook (serves 2)

Ingredients:

  • 1 cup instant whole wheat couscous (uncooked)
  • 3 Tbs olive oil
  • 2 lemons
  • salt
  • pepper
  • 2 cloves of garlic chopped finely
  • 1 tsp crushed red pepper (omit if you don’t like spicy stuff!)
  • large handful of fresh basil, washed, chopped roughly
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 2 boneless, skinless cod fillets
  • 1-14 oz can diced tomatoes (I often use 2 cans)
  • 1 cup frozen peas

Directions:

Prepare the couscous per package instructions. When done cooking, stir in 1 Tbs olive oil and the juice from one of the lemons. Season lightly with salt and pepper. Set aside.

Heat 2 Tbs of olive oil in a large saucepan over medium heat. Add the garlic, crushed red pepper, basil, cumin and cinnamon. Stir for about 15 seconds until very fragrant. Lay the fish fillets into the pan. Add the tomatoes, peas and juice from the remaining lemon to the pan. Make sure the fish is nestled nicely between the sauce mixture. Cover the pan with a lid and bring to a boil. Reduce heat to low and simmer for 8-10 minutes. The fish is done when it is no longer clear and flakes easily with a fork. Add salt and pepper to taste.

Divide couscous into bowls. Spoon stewed fish on top of couscous. Enjoy!

Notes:

If you are serving a larger crowd, this recipe can be easily scaled up. Couscous is really fabulous in the recipe but you could also try serving this dish over brown rice or even quinoa.

You may want to add additional vegetables to this recipe. Green peppers would be great addition. Jaime also recommends adding green beans. I am toying with the idea of adding pineapple next time I make this recipe. It think the sweetness may be a nice addition.
