Kale, Apple and Almond Salad

I know I have been in a recipe slump for the past few months because few ideas have been coming to mind. I may be making a comeback because the other day I got the idea for this kale salad.

My recipe ideas tend to come to me at some random time. I think I was watching a movie and then all of the sudden the idea for this salad popped into my head!

I really enjoyed this salad, it is definitely a keeper. Kale can be a tad bitter so it helps to have a touch of sweet. The apple and raisins work well for this purpose and they also add some fun texture.

Kale, Apple and Almond Salad Recipe

Serves 2 as main course, 4 as appetizer or side



  • One very large bunch of kale, washed and dried thorougly, stems removed, leaves chopped roughly
  • 1 apple cored and cut into thin slices
  • 1/4 cup toasted almonds
  • 2 green onions roughly chopped
  • 2 Tbs unsweetened raisins
  • 2 Tbs shaved parmesan


  • 3 T olive oil
  • 2 T Balsamic Vinegar
  • Salt to taste


Turn oven to broiler setting. Arrange chopped kale onto baking sheets. You may need several sheets as the kale is quite fluffy when raw. Place under broiler for 4-5 minutes until dark in color and somewhat crisp. If you like the kale more crisp, keep your oven door cracked open while broiling. Let kale cool and place into large bowl.

Toast almonds while kale is broiling. To toast, place raw almonds in a small pan over medium heat. Keep almonds moving every 30 seconds or so by shaking the pan. Toast until slightly darker in color. Set aside.

Combine all ingredients in a large bowl. Taste and add a sprinkle of salt as needed.
