I love hummus, but sometimes I like to change things up.
When I was out visiting my mom one weekend, she whipped this up and I could not believe how good it was! I love how it tastes and how simple it is to make.
This dip makes the perfect snack because it will help keep you full between meals. White beans have on average 15 grams of protein and 15 grams of fiber per cup! You can use any white bean you want in this recipe, but I recommend cannellini beans or garbanzo beans. Cannellinis will be creamier, if that’s the texture you’re going for.
Easy White Bean Dip
- 2 cups of cannellini beans
- 2 small cloves garlic
- 1/4 cup fresh chopped parsley
- 4 Tablespoons extra virgin olive oil
- 2 Tablespoons fresh lemon juice (usually around 1 lemon)
Combine all ingredients in a food processor or high powered blender. Pulse until creamy and well mixed. You may need to add additional olive oil or water to thin out the dip a bit. Just add tablespoon by tablespoon so you don’t make it too watery. Season with salt and pepper to taste. Serve with cut raw veggies, and/or toasted pita bread.
