6 Healthy Lunches You Can Make In A Snap

I know I sure do.

I like the eating part just fine… Its the part of the preparing and cleaning up that can seem like a hurdle.

Sometimes my day just gets going on a good roll and I don’t want to take the time to eat a healthy lunch.

I don’t always feel like this, but when I do, I keep healthy options on hand to whip up something super fast.

Having quick and healthy options around can make or break your healthy lifestyle. So the next time you think about heading for fast food to avoid preparing lunch, consider these options. They are my favorite for something fast.

1. Protein Smoothie

This is usually my go-to when I want a fast lunch (or breakfast) at home. Although it varies from time to time, I usually make a recipe like this:

½ small banana, 1/4 avocado, 1 cup frozen berries, 8 ounces unsweetened almond milk, handful of spinach, and 1 scoop of protein powder (15 grams of protein), more water to thin if needed.

For protein powder, I like Garden of Life Raw Protein or Sun Warrior Blend.

2. Hummus with veggie slices + apple and nut butter

So easy, especially if you have store bought hummus around. I really enjoy Trader Joe’s original hummus. Cucumbers slices are my choice of dippers, but baby carrots work great in a pinch.

3. Scrambled eggs + avocado + 1 pc Ezekiel toast.

4. Lettuce and Turkey roll-ups

These are sooo easy. All you have to do is take a leaf of romaine lettuce, place a piece of turkey on top, followed by an avocado slice and/or tomatoes. Roll up like a taco and enjoy! For deli meat, I like Applegate organics.

5. Salad

This option is only fast if you have everything prepped before time. A few times a week, my husband and I will chop and wash a huge head of lettuce and make dressing. When lunch is needed, we can easily whip up a salad.

6. Leftovers

The ultimate quick lunch. Soup and chili make the best leftovers and are pretty portable as long as you have access to a microwave.
